Finally, some sunshine and hint of warmth today! To celebrate, I found myself at Whole Foods enjoying a salad creation and a raspberry Synergy outside.
There was a new item at the salad bar – French lentil salad, and curious me globed it into my salad bowl. It was very good, had a peppery kick with fresh greens and olive oil nicely blended. I skipped the Parma this time and no heart burn. :-)
The drive home from work was beautiful, I actually had to dig out my sunglasses and avoid hitting all the residents in our neighborhood out walking dogs, jogging, etc. That reminds me, I need to take my bored pooch for a looooong walk.
When I got home, I got sidetracked creating a new dehydrator recipe (fingers crossed it comes out edible) and sampling my work, so I opted for a light, fresh dinner in the spirit of Spring-like weather.
My own party platter. :-) I whipped up the Hemp Dip recipe from Sweetly Raw and served with cucumber, carrot, snow peas, yellow pepper and a steamed artichoke, it made a great dip for everything and tasted a lot like zucchini hummus recipes I’ve tried in the past.
It was super easy to toss into the Vita-Mix and very filling. Hopefully the dehydrator experiment works and I’ll be posting it tomorrow. Until then, time to hit the gym!
