I hope the Easter bunny treated everyone well! I’m having a lovely relaxing morning in front of the fireplace … which we need today because it’s so freaking cold! 46 degrees according to my weather widget, and it’s overcast with more rain for today. At least the pets are enjoying their morning in front of the fireplace.
We’ll be heading over to my dad’s later today for a family dinner with not one, but two raw desserts I made and a raw side dish (or main dish for me :-) ). More on the desserts tomorrow after I see how well received they are today because one is another experiment using almond pulp along with the “cheeze” cake from Ani’s Raw Food Kitchen.
I put another new NuNaturals Stevia product in my breakfast smoothie, Pure Liquid Alcohol Free Stevia.
What’s amazing about the little 2 oz. container is that is has 169 7-drop servings in it – that’s a lot of smoothies! This particular smoothie was mostly veggies – carrots, sprouts, spinach, hemp protein powder and some fresh strawberries. But it was a very sweet smoothie thanks to the stevia, I was surprised at how much sweetness was added by just a few drops and am imagining the possibilities for sweet nut butters, sweet cashew cream “cheeze” and fruit spreads in the Vita-Mix. This is a cheaper sweetening option than dates when I think of how much money I spend on medjool dates from Whole Foods and Costco. And of course a lower calorie option that’s better for those concerned about blood sugar.
Anyway, after breakfast, I hit the gym, then got to work messing up my kitchen while making the desserts for today – totally worth it. I used to hate cleaning the kitchen, it always seemed to be a tedious task I tried to avoid after a busy day, but don’t mind it so much more now knowing the good things that were created while making a mess. I have washing the Vita-Mix and food processor down to a fine science that takes just seconds when the me from a few years ago would have cringed at the thought of washing a food processor!
Then lunch time rolled around where I created a must-be-eaten salad consisting of veggies in my fridge that needed to be used up.
It had jicama, carrot ribbons, tomato, sprouts, half an avocado, green onions, cilantro and topped with Whole Foods three pepper salsa for a dressing, very nice and hit the spot since I needed something after dessert sampling, but was not too starved. :-)
Then we stepped out for an afternoon movie – How to Train Your Dragon in 3D, what a blast! Can you believe that was the first time I’ve seen a 3D movie in theaters? It won’t be the last! I highly recommend it for everyone, it was such a fun and cute movie and the 3D made it much more gripping and entertaining. You know I’m a raw geek when I sneak a kombucha into the theater. :-) Sadly, it was still cheaper than buying a fountain drink or a bottled water at the theater and I seriously doubt we’ll be seeing them at the concession stand anytime soon. The older gentleman sitting near me was curiously staring at the bottle after I pulled it out, I think he thought it was an alcoholic beverage!
When we got home, we played dueling chefs in the kitchen creating dinner where I had a splurge.
Another one of my occasional splurges. I’m not a big drinker, but it’s very hard to live in this area and not appreciate wine. I only have about 2 glasses a week and I had to splurge since I gave it up for Lent. :-) BTW, this is an excellent zin that went well with another monster salad.
Spinach, sprouts, carrots, tomato with hemp seed zucchini pesto dressing whipped up in the Vita-Mix – Yum! Yeah, it was a salad day, but trust me I made up for it sampling my dessert creation. :-)

Black beauty zucchini and black krim tomatoes from organic seed packs I picked up from Whole Foods. At this rate, I’m going to be one of those people bringing bags of zucchini to unload at the office! Just wish the weather would improve so we could move them into the newly created organic planter box in the backyard!
