Whew, finally the weekend and I’m happy to put this work week behind me! And already it’s been a wonderful weekend. Yesterday for lunch, I got experimental with the leftovers I had of Ani’s Love-the-Chicks nut pate by putting fresh spinach, cilantro, carrots, 2 tbsp. of nutritional yeast and salt and pepper into the food processor with a couple of scoops of the pate. This is what I ended up with:
Not the most beautiful dish in the world, but it was good. The nut flavor was evenly distributed through the pate and the yeast added a creaminess to a quick, well rounded, filling lunch. I need to experiment more with nut/veggie pates because they can be great for easily digestible and quick lunches at work when I need to run errands on my break.
For dinner we headed to one of our favorite local sushi places where I splurged on veggie tempura and a side of these:
I rarely eat them, but they’re a great source of protein and fiber when eating out at a Japanese restaurant when some of the other vegan options are void of protein … like veggie tempura. In most cases, veggie tempura should be vegan if following a traditional Japanese recipe, but some places may put eggs in the batter so you might want to ask before ordering. I find I need more protein in my diet, I feel more tired, hungry and drag if I don’t. I go through a lot of hemp protein powder in my breakfast smoothies and am trying to include more beans and avocado in my diet this week while reducing the nuts a bit to see if I feel more energized.
I have a lot planned for this weekend that I probably won’t get to all of. One is cleaning out my closet, bringing down the spring/summer clothes and stashing the winter clothes. Yesterday morning I stood in my closet with a blank stare for a good 10 minutes trying to figure out what I wanted to where, nothing appealed to me for some reason. Ever have days like that? Time to do a little sorting, laundry catch up and donating of clothes I have not worn in awhile. LifeHacker has a great hanger trick for singling out clothes you just don’t wear anymore which I think I need to try each season this year to get rid of clothes taking up space in my closet.
Also, the weather is gorgeous today, so we’re going to pack some lunch and a bored chihuahua and make a trip to one of our favorite hiking trails, Hidden Falls, and hope the falls are impressive thanks to snow runoff. I hope everyone is having a great Saturday so far!
