Ah, what a great weekend so far, I’m loving this quiet Sunday morning enjoying my green monster, actually more of a purple-brown today, in front of my laptop. Yesterday was a wonderfully relaxing and productive day. I woke up early feeling a little tired and groggy thanks to a cat walking all over me to let me know about the empty food bowl, they can be so helpful that way. :-) But I felt much better after hitting the gym and created this beautiful salad for lunch after.
It had purple carrot ribbons, marinated portabella mushroom slices, tomatoes and avocado topped with zucchini hemp seed pesto and sprouts making a great, creamy and filling combo. Very colorful and flavorful.
After I had to take advantage of the beautifully clear and crisp weather and take the dog for a long walk and watch the happy cows in the pasture across the street equally enjoying the weather.
Happy cows come from … yeah, love the super green grass after all the rain and cows are very active at night, I can usually hear them, uh, presumably getting busy from my backyard. I then booked it to my hair appointment and I’m really happy with the results – I went back to the natural color, no more highlights, and kept the length. I’m looking forward to trying more natural hair color solutions to maintain the color and cover the grays.
Later hubby and I went to a new sushi place for dinner where I was pleased to see a vegan roll on the menu.
I indulged in vegetable tempura and an awesome ginger salad.
I love tempura, it’s my idea of splurging, my french fries. :-) I also like that I can always find vegetable versions of it and it’s one of my go to foods at Japanese restaurants. Anyway, I’m off to start another raw carrot cake for my mom to take to a work potluck and do a little shopping so far. I hope everyone is having a great weekend so far!
