Thanks to running on a lack-of-sleep and a busy work day, today feels like a Monday … still not sure why my cats darted across the bed several times over the night, think I need to have a talk with them about that. Anyway, I got a super shipment of pumpkin seeds from Amazon, my pantry is loaded with 4 of these.
And wow, they are good, sprinkled some on my dinner salad last night and I’ve just been enjoying snacking on them. I’m also excited to try Gena’s Coconut Pumpkin Pate this week, it looks awesome.
Lunch was another beautiful salad with red cabbage, tomatoes, sprouts, celery, carrot ribbons and an orange ginger dressing I whipped up in the Vita-Mix topped with sunflower seeds, very good!
For dinner tonight, I revisited a recipe I have not had in awhile because I was able to find large enough zucchini for spiralizing on my last Whole Foods trip, zucchini marina from Jennifer Cornbleet’s book.
Only I pureed the walnut pate ingredients into the marinara sauce instead of forming walnut meatballs. Last time I tried that, the walnut balls just disintegrated into the sauce after serving. It came out good, the marinara sauce was thicker and creamier thanks to the added walnuts.
