Happy almost Friday to everyone! I have to admit, I’m very ready for the weekend. This has been a busy week at work and hubby is not feeling well, so I’ve had a bit of double-duty at home too. Lots of people are sick around me currently, co-workers, sisters, nieces – with awful cold and sinus symptoms. I’m really banking on my immune system this week and thanking the greater powers that be I have not caught it yet. Anyway, I got a really sweet gesture from a co-worker today who wrote me a cute little thank you note with beautiful pair of earrings she crafted for fixing her computer. It was such a sweet and generous gift that really made my day. It also reminded me of the importance of showing appreciation and making other peoples days, something that’s so easy for me to overlook when I get weighed down with work and other things running in the background. But I also have the power to improve someone else’s day and need to when I have the opportunity.
Hopefully this will last me awhile! But, I need to get larger mason jars to store the seeds in my pantry, maybe an Ikea or Sur La Table trip is in order this weekend. :-)
For dinner, I did a colorful salad topped with hemp seed pesto dressing and Brazil nut parm topping, it was a great combo with sunflower sprouts, carrot ribbons, red pepper and cilantro. That’s what I call and end-of-the-week salad where I use what ever needs to be eaten up.
Among the veggies I had to use was this crazy looking heirloom tomato.
But it was good, very sweet and flavorful. I also had steamed spaghetti squash, not raw – I know, but I’ve yet to come across a good raw recipe for spaghetti squash.
I desperately need to do a little shopping at Target (pet food, hair gel, blah) and Whole Foods this weekend, my fridge is actually looking bare. At the beginning of the week, I could barely fit all the produce in! But now I need to start a load of laundry and head to the gym before I poop out. :-) Hope everyone has a great evening.
