Ah, tomorrow is Friday and while this week has not been too stressful, I’m looking forward to a great-weathered pampering weekend. Along with my hair, I’m thinking of a pedicure since the weather is showing signs that it’ll be time for open-toed shoes soon! This morning my green monster was an impressive green instead of a brownish-purple.
I stuffed about as much fresh spinach as the 32 oz. Vita-Mix container would hold, plus a little kale and sprouts that needed to be eaten up. It also had an strong ginger punch thanks to a large chunk of fresh ginger and a creamy smoothness from frozen banana slices. Very filling!
My throat is a bit scratchy today and a mid-morning cup of tea hit the spot.
I love the cheap selection of organic teas from Trader Joe’s and this one has a mild, mint flavor was just soothing enough.
Lunch was a pretty salad and another green monster with my mom. Like me, she has a ton of spinach that needs to be used up and I’m starting to feel like Popeye today! It’s all good though, the extra green intake feels needed to combat what I hope is not the early stages of a cold.
Dinner was gorgeous! I had a huge acorn squash to eat and debated on doing a raw recipe with it, but opted to bake it instead – comfort food. I enjoyed with a perfect salad trying Gena’s Beet Dressing, purple carrot ribbons, red bell pepper, sprouts, red cabbage and cilantro – a definite rainbow explosion!
Well, it looked like a rainbow until I poured the dressing on, then beets won the color war. :-) So it kind of looked like zombie gore, but I’m sure tasted way better.
I received a new goody from Amazon today to add to my growing raw book collection.
Ani’s Raw Food Desserts and I can’t wait to start trying some of the recipes for upcoming Easter events! And I actually watched today’s Oprah while working on dinner and waiting for hubby to get home and it was on Food, Inc. and had Alicia Silverstone on pumping her new book and her vegan diet, very cool episode to catch.
