Another busy day at work, but a much more productive one. I loaded my smoothie with purple kale and fresh ginger this morning and noticed I tend to be in better moods on days I put ginger in oddly, there’s something calming, warming and uplifting about it that’s hard to describe. But, ginger is a regular on my weekly shopping lists now and used in many Vita-Mix salad dressings.
I got experimental for dinner and did the nacho hemp seed sauce from Kristen Suzanne’s Ultimate Raw Vegan Hemp Recipes, one of my favorite sauces, and mixed with chopped broccoli for a nacho broccoli mash and it came out great.
I paired it with a romaine sprout salad topped with Gena’s Carrot Miso Dressing, one of my favorite dressings that I can throw together quickly in the Vita-Mix and always have carrots on hand. But that nacho recipe creates over a cup of cheese and I only needed about half for the broccoli. I was making hubby seasoned ground turkey in Annie’s Mac N’ Cheese for a chili mac dish and actually mixed in the rest of the nacho sauce to up the spice and flavor in it and he loved it. So Kristen’s sauce could make a great cheese replacement in mac n’ cheese. :-) But, I’m now officially out of hemp seeds and will be ordering the 5 lb. bag from Amazon! It’s cheaper then buying that much from Whole Foods.
