Blah, the weather is still cold, windy and rainy and this is supposed to last through Easter – there goes the cute little dress I was planning to wear. But, I’m still looking forward to getting together with family and having a good time. I went for a bit of gooey comfort for lunch.
Creamy cashew cauliflower with a colorful salad and Jennifer Cornbleet’s cucumber pepper dressing. Mmm, imagine cauliflower coated in onion rosemary flavored cashew butter – very awesome and filling!
Not sure it if was the weather or me fighting off a nasty cold running around work, but I felt a bit tired and sluggish today with a mild scratchy throat. So for dinner I did a modified version of garden vegetable soup packed with avocado, cabbage, zucchini, spinach, sprouts, tomato, basil, garlic, lemon juice and miso.
It tasted a lot better than it looks. :-) Some people like chicken noodle soup when feeling a bit under the weather, I like green monster soup. I ran it for about 4 minutes in the Vita-Mix to warm up, but wanted something hot with it, so I steamed a piece of spaghetti squash and topped with a little salt and pepper.
Never tried chocolate applesauce, it was pretty wild, but very good. It blended apple, cinnamon and chocolate nicely and something that’s super easy to whip up for a healthy dessert or snack.
I also tried a new dinner adventure on my dog, I gave her half her regular dog food and half raw dog food consisting of blended sunflower seeds, spinach, olive oil, sprouts and a little salt.
It went over much better than her all raw dinner last night, she actually ate most of it.
Granted, it took her much longer to eat than usual, she would stop, walk away and come back to try a little more and I think she may have been trying to separate her old favorite food from the fresh food. :-) But, progress and I’ll continue to test what foods she likes.
