I hope everyone is having a great weekend so far, I am despite rainy weather and a scratchy throat. Yesterday I got up on and made myself a blueberry, banana, carrot, kale and hemp smoothie before meeting my sister for another trampoline aerobics class. I was unsure about a weekend morning class, leaving the house early in yucky, cold weather with a sore throat was not super appealing when there was a perfectly good fireplace to sit by, but I was very glad I did it after and felt much better. Though I’m feeling it a bit today again, it was the more advanced class! It’s been awhile since I’ve dealt with a scratchy throat or any cold symptoms and forgot how much I hate them! I feel like a whinny kid trying to function normally with this though I should be thankful it’s not that bad and I can still function and I’m already feeling better compared to yesterday.
After I got home, I decided to juice some veggies for a nutrition boast and to get pulp for today’s recipes. I juiced the rest of the beets and was delighted to read the benefits of fresh beet juice. I also threw in some red cabbage and broccoli greens for a very sweet, purple concoction.
Turns out beet juice has the same effect on pee that beets do for me … only it lasts all day, pretty! Then I threw together a huge kale salad for lunch with Ani’s orange miso dressing, super good!
For dinner, we went to a raw dinner hosted at an instructor’s house. She created many new recipes for us to try in courses including amazing coconut zucchini dosas, coconut bisteeya wrappers, amazing ginger sauces, jicama couscous and mango coconut pudding. And she gave us the recipes for all of it! We had a great time watching her demo some of the recipes, sampling and chatting during the main courses, I hope she does more of the dinners and I can’t wait to start trying some of these recipes. But some are very advanced, so maybe not right away.
Now I get to start Superbowl food prep and spend a lot more play time in the kitchen :-)
