Can’t believe it’s Sunday already, weekends are flying by too fast! It pretty much rained all day, so I spent most of it being productive at my mom’s house. My mom is also trying to adopt a heavy raw vegan diet, not an easy thing for a woman in her mid sixties. But I also don’t know too many women her age that can still work as a full time nurse, regularly babysit very active grandchildren and live independently, I hope I’m so lucky at her age. But, she’s still adapting to raw recipes, food planning and adjusting how she shops. She has a tiny townhouse with an equally tiny pantry packed with canned soups, pasta, rice, canned tomatoes and other foods she hasn’t eaten in a long time and knows she never will. Today I helped her clean out her pantry and look at some of the items we weeded out:
In total, we loaded six huge bags to take to the local food shelter and freed up over half of her pantry! She decided convert to a heavier raw/whole foods diet after attending some of the raw classes with me, seeing the nightmare that is most processed foods and meats in Food, Inc. and wanting to provide healthier foods for her grandchildren which is awesome.
After, we created Ani’s Spanish scramble for lunch, I got to walk her through using her Vita-Mix on creating the pate and show her how quick this recipe can be assembled and make a great satisfying lunch on a bed of greens.
Then we finished off my Jaffa Pudding leftovers by dipping orange slices in it, tasty! Now I’m working on approximately 38 loads of laundry for the week before throwing together some dinner and fully going through the Sunday ads. Also working on a new almond pulp cookie recipe currently dehydrating, keeping my fingers crossed they come out edible! :-) Hope everyone has a relaxing evening!
