Today was a depressingly busy day, we had our first mostly sunny and bright day in weeks and I was inside most of the day. But, according to my weather widget, we’re supposed to get sunlight over the weekend … if it’s not lying … and it usually does. However, I managed to have an all-raw day, woot! And I’m having more all raw days as I keep finding new recipes to try. But for dinner, I didn’t follow a recipe, I just threw a bunch of items into the Vita-Mix for a salad dressing. Last week I impulse bought fresh beets at Whole Foods not knowing what I was going to do with them, something I do a lot. I tried to chop one up for a salad tonight and found it was way too tough and bitter to eat raw. So I threw it into the Vita-Mix with an orange, a carrot, chunk of fresh ginger, some water and a tbsp. of miso. The beet was so tough that even the Vita-Mix sounded angry, but chewed it eventually and this is the result:
It was good, not great, but a strong ginger flavor and an underlying beet flavor. Hard to tell in the pic, but it’s neon pink and does not look like a typical natural raw dish, but like artificially colored berry sorbet, very freaky. The dressing would probably be great without the beet also. Then again, this is probably the easiest way to digest a raw beet!
I also tried making hemp butter from seeds today, but cautiously after reading not to blend too long in the Vita-Mix because it could heat up the butter too much. So I got something that looked like chunky, green mustard. I mixed with a little cinnamon, nutmeg and agave nectar and spread on raw carrot bread for dessert:
I warmed it up a little in the Excalibur which made the butter extra gooey and good. It tasted much better than it looks, the cinnamon and nutmeg accented the raisins in the bread nicely, plus it has a ton of hemp protein and carrot pulp. My hemp butter did not spread that well, but it added texture … I think I need to buy hemp butter instead of trying to make it :-)
