I was not too thrilled to hear my alarm clock this morning, then have my cat puke in the middle of the kitchen floor while I was chucking ingredients into the Vita-Mix for a smoothie. Nothing says “Good Morning” like fresh, steaming cat barf! Perhaps I need to convert her to a heavier raw diet for improved digestion. Then I arrived to the office for a busy start to the day with a couple of co-workers out sick and lots of fires to put out while trying to be encouraging to a co-work bragging about getting back to the gym over the weekend for the first time in years.
I tried another bread recipe over the weekend, Gena’s Carrot Raisin Bread but upped the raisins to make it more of a sweet treat.
Making the bread was a bit of an ordeal because the “dough” was hell-bent to stick to the massively heavy marble roller I was using, I had to stop and oil it with flax oil frequently. Using a spatula to scoop up the wet bread slices to place on dehydrator sheets was not was as they wanted to stick on the bamboo chopping block I rolled them on, I should have put parchment paper between the dough and cutting board.
The flavor was a bit mild, but tasty and it had a great texture – firm, but moist and held the bread shape and did not get mushy after being in a sealed container in the fridge overnight. It’s also a very configurable recipe, instead of raisins, it can be spiced with a little curry, or cinnamon and agave/stevia added to sweeten, there are many possibilities. I like that it was not a very heavy nut or flax seed base making it a less caloric, light bread. This was much more of a success then my onion bread last weekend, my husband calls these carrot brownies and with a little more sweetness or Kristen’s Cinnamon Spread on top, they would be a sweet breakfast or dessert treat. Overall, it’s a great recipe that I’ll do again, maybe add chopped walnuts and cranberries next time, whatever sounds good.
For dinner, I opted for a big, messy Mexican themed salad with salsa, guacamole and Ani’s baja cheeze topping, nice to end Monday with a fiery kick!
