Yay, another rainy day! To quote Stimpy – “oh Joy!” Actually, we finally got some sunshine in the evening, I had to find my sunglasses for the drive home for a change. And a little rain is nothing compared to the mass amounts of snow the poor northeast is getting! I hope everyone is hanging in there or, as we used to say in Florida when a hurricane was on its why, hunkering down until it passes. I had to give a co-worker crap today for what he ate for lunch – ramen soup and a tootsie roll pop. No veggies or real food. And it was the nasty instant ramen with stale dried noodles, nothing like the works of art in The Ramen Girl. Pfft, guys … and specifically guys in IT! At least I ate well today! For lunch I had dinner leftovers of Ani’s Mexican Squash “rice”, kale chips and dried apple chips.
I topped the rice with Ani’s cashew garlic topping and I highly recommend it as a simple and good way to eat raw acorn squash. I used the iPhone PhotoShop to prettify the pic, maybe I kicked the color up too much :-P
For dinner I did another one of Ani’s recipes, seems to be my favorite raw book lately with all the winter squash recipes. But this one used broccoli and Brazil nuts because I’m trying to find more raw broccoli recipes I like.
I processed the broccoli into a perfect mash and it was great with Brazil nuts and garlic, perfect main dish or side. But – raw broccoli and garlic could be disastrous to those new to raw, you may want to pop a couple Beenos before consuming!
The Brazil nuts add a perfect creamy texture to the raw broccoli with a strong garlic flavor, so far this is my favorite raw broccoli recipe. It also makes a great leftovers recipe that will keep in the fridge for a couple of days and can be served in lettuce wraps, mixed with salads, a dip – many options. My food processor is getting a good workout this week!
