Sigh, today was another rainy, wet day and somehow I managed to stay raw all day with another super smoothie for breakfast, salad and fruit for lunch and one of my favorite dishes from Ani’s Raw Kitchen, Walnut Cranberry Rice, for dinner.
It’s a filling dish containing butternut squash processed in a food processor, dried cranberries, cilantro, crushed walnuts and onion, great combo of sweet, tart and spicy. It’s also a good in the fridge for a couple of days, so I try to make a big batch of it when I can. I actually dehydrated fresh-frozen cranberries I had in my freezer for this because it’s hard to find dried cranberries that have not been sweetened. And drying cranberries is an ordeal, the first batch I tried did not shrink, they just got hot and bloated because the liquid was not draining. So for this round, I cut them all in half before dehydrating – a super messy pain, but it worked. Think next time I’ll just use a needle to poke holes in them.
I also learned something scary today, I have to throttle back my love of Brazil nuts because they’re too good a source of selenium. Of course I learned this after I snacked on a few! But, I guess I won’t be making as much of Brazil nut dressing, milks and cheeses as I used to! Unless selenium poisoning can make just my gray hairs fall out :-P Oh well, I will have to be careful to research more ingredients now and keep rotating my nut intake.
During winter, I tend to get stuck in an exercising rut, doing only an indoor elliptical for cardio because the weather is too wet and/or too cold for outdoor. But, my sister invited me to an indoor trampoline class tonight for a change and I was glad I went. I have not been to one in 6 months and was afraid I’d gotten a little rusty, but I survived with no major wipeouts. Here’s what the trampoline court looks like:
Not a great phone pic, sorry, but each person gets a trampoline square to do a series of instructed aerobics. And let me tell you, rocking cardio on a trampoline for an hour will work just about every muscle you have, it’s an awesome workout. Here’s an instructor doing a demo:
