Well hello and TGIF! I am feeling much better today, no longer sore from the trampoline class earlier this week, throat feeling better and charged from a good nights’ sleep … and it’s Friday! Life is good. It’s been a heavy raw week despite cold and foul weather and I have some kitchen fun planned for the weekend. I found this post from Dr. J very interesting and so true when I think of how easy it is to overly focus on our negatives and not the positives, which I’m guilty of getting into this rut at times. That’s one of the reasons I like the Cafe Gratitude book so much as it focuses on being thankful for everything from amazing foods to the simplest little pleasures. When on a “diet”, many people tend to focus on all the foods they can’t have and make themselves miserable feeling deprived. To me, the overall theme of the raw diet is to appreciate better foods from better sources and the positive affects that has on mental and physical health. I don’t miss candy, junk cereal or any of the processed foods I ate in the past, but really enjoy creating better flavors from basic, fresh ingredients. I definitely do not miss dairy, especially with the nut milk and nut cheeses that are so simple to make and so much more energizing.
Anyway, we opted for a relaxing evening at home after the stressful week and I had a bag of Trader Joe’s organic spinach to use up in the fridge, so I did a super green spinach soup with dinner.
I kicked it up with cilantro and cayenne pepper, very good and smooth and sprouts are becoming one of my favorite soup toppings for some reason, they add an interesting texture to the soup when mixed in. Anyway, I’m going to a Whole Foods raw fair tomorrow and looking forward to it with demos, samples and lectures and should come back armed with more recipes, knowledge and in a super happy place from sampling many raw desserts! :-)
