TGIF! My short work week seemed longer with jet lag and phasing back into my usual diet, I think my insides are still recovering from a week of WTF-eating. This morning I tossed a clementine orange and cranberries into my smoothie along with a splash of carob powder, spinach and a packet of Truvia to counter the cranberry bitterness and I was to say it was not great. I liked the orange flavor, but the cranberry was a bit too strong and I think I’ll stick to my usual mixed berries tomorrow.
What better way to spend a Friday evening than grocery shopping? Yeah … it’s actually a great time to go to Costco though. But, we’re both still a bit wiped and I desperately needed food after being gone a week, so I braved Whole Foods after work armed with a long shopping list and lack of inspiration for dinner. It was a pleasant trip, no where near as crowded as the weekend and I stocked up on fresh ingredients for the week. I also hit the salad bar for a monster salad for dinner. When I got home, I created a version of this dressing in the Vita-Mix to serve with it.
I used a thicker raw honey and two peeled clementine oranges since I didn’t have orange juice and it came out like a thick, citrus flavored custard or yogurt. It was very tasty and light and coated the salad nicely, but a little think for a dipping sauce, next time I might add a little water.
