Happy Wednesday – well, sort of for me, I’m still dragging this week. I was less-than-enthused to fumble around the kitchen this morning to chop and prepare veggies for a smoothie, but I did it.
Pardon the terrible cell pic, it was a rush job. Did I mention I love my Vita-Mix and the 32 oz. container? Anyway, I tossed in spinach, a carrot, berries and frozen banana pieces with nut milk and blended to a silky smooth texture, I’m sure hubby appreciated listening to that while sleeping in on his day off :-P Since it’s getting colder and I’m always cold in the morning, I’m finding myself craving a warmer breakfast over a cold smoothie. I suppose I can experiment with a warmer, blended fruit & nut salad … hmmm, maybe tomorrow morning.
For lunch, I packed the left over spiraled salad from last night with walnuts sprinkled on.
Along with a ginormous apple from our Apple Hill trip last week. But, that proved to be a weak lunch, so I grabbed a snack around 3 PM.
Good, not sweet, but not as coconutty as I would have like.
I love experimenting with our Vita-Mix, just throwing in veggies for a blended salad and seeing how it comes out. Tonight I shall call my creation raw garbage soup where I basically pulled many of the veggies from my fridge that needed to be eaten up and concocted a soup. Tonight was about half a green head of cabbage, lemon juice, 3 chopped celery stalks, a small avocado, a handful of fresh cilantro, dried dill, miso paste, water and half a dried Thai pepper.
The result was one of my best creations, it tasted like a fresh, whipped, light, cilantro-based guacamole soup and would even make a good, lower-calorie guacamole dip. A recipe I need to recreate and write down now :-P
